Melanzane alla Parmigiana

‘C’ has been out of town for the last week on business, and I thought I would take this opportunity to invite some girlfriends over to my place for a girly dinner! I love girl’s night, it’s just a chance to sit and chat, drink wine and eat some good food. I have been so lucky to have met some lovely girls here in Mexico whom I have come to consider good friends and I wanted a chance to show my appreciation for them by throwing this dinner party.

I also took this opportunity of ‘C’ not being around to make Melanzane alla parmigiana – which basically is an aubergine lasagna. You see, ‘C’ is ‘apparently’ allergic to aubergine, which is why I never cook with it when he is around. I say apparently, as I am quite convinced he isn’t but rather he just doesn’t like it, and by saying he is allergic he knows I won’t bully him into eating it :) I can be quite pig headed at times…

There is a great chef in Sweden called Tina Nordström, she has become such a household name over the last decade, and is really known for her simple recipes and using very true Swedish ingredients. Plus she is a lot of fun to watch and she comes across incredibly amicable!

Salmon and Spinach Pie

As I recently mentioned I have been feeling under the weather the past week – and as you all know, there is nothing more off-putting then food when you are feeling ill. My dad used to joke with me that when I was growing up, that there were three words that I would tell him more often than any other, and it wasn’t “daddy I love you” but rather “daddy, I’m hungry!” When I would stop eating he knew that I was really ill… and that was when my parents would start to worry!

Hence – there has not been a lot of cooking going on in my kitchen over the last week. However, I was looking through some of my pictures from the summer when I was in Sweden (yes I am still unemployed and have plenty of time on my hands), I realised that although I was not actively blogging, I was very actively cooking, and have a quite few recipes up my sleeves that I want to share with you, like this Salmon and Spinach pie.

Vichyssoise

Unfortunately I have no photos to share with you on this beautiful creamy yet refreshing soup – I served it as a starter at a dinner party the other night, and you know how hectic that can be when you have a house full of people and your concentrating on preparing all your dishes, the last thing you think about is taking a photo…at least that is the last thing I think about! Maybe that means I’m not and will never be a great food blogger, but so be it! The quality of the food is more important than the picture!

Birthday Rambles and Bouef Bourguignon

It was recently my birthday…I have hit my last year of my 20s and to be honest it does not bother me at all. I have never been the sort of person who plans her life around her age I have always just gone with the flow and taken the opportunity that life has given me– and I have found that has suited me very well indeed.

However, I would be lying if I did not admit that I had a few episodes of anxiety running up to my birthday and a few niggling brain gremlins that I couldn’t keep quite in my more vulnerable moments. “What, your almost 30 and you don’t have a career?”, “This is the time to be making a name for yourself and start really making money!”, “What exactly do you contribute to society?”, “What are you doing with your life?”, “where is that bikini body you keep talking about?”….and the list continues!
