Happy Easter Monday!

Yesterday, ‘C’ and I came back from a lovely weekend at our friend’s country house about a 2 hours drive from Mexico City, situated in a little quaint Mexican village called Malinalco. Although it was meant to be a relaxed weekend by the pool – there was far more drinking and eating than I had anticipated! This combined with an incredibly hectic 2 weeks in Peru (which I promise to write about soon) has left me broken.

I woke up this morning flu ridden and absolutely drained – and in desperate need of both vegetables and some comfort food. So for lunch I rustled up this tomato and spinach spaghetti, and it was exactly what the Dr. ordered.  Keep Reading

World’s Easist Lasanga

World's easiest lasagnaThis recipe is one that I adapted from Jamie Oliver’s lasagna recipe – which I love and would highly recommend anyone to try it. Jamie O’s Lasagna.

 However, he does claim that it is a very simple recipe, but I beg to differ! There is quite a lot of faffing about –  such as buying fresh pasta sheets and pre-cooking them, roasting butternut squash and adding it into the meatsauce (which does taste fantastic!) and although that is all very good…sometimes you just don’t have time or the energy, and you just want to make something – well…simple! Quick & Easy Puttanesca – My Version!

It was one of those evenings where ‘C’ was out of town for business, so I didn’t really feel like making a huge meal, but at the same time wanted something substantial to eat for dinner. I had walked home from Spanish class and was freezing (someone forgot to inform me that it actually gets cold in Mexico!) so I was in the mood for something hot and comforting!

Putanesca is one of my all time favorite dishes to make when I’m coming home late (because it is so quick and easy), or even if I have nothing else in my cupboard, I know I will ALWAYS have tomatoes, capers and olives and some kind of fresh and dried herb kicking about my cupboard or fridge. Throw all these ingredients together – and you have made a fantastic sauce be it for pasta, grilled chicken, a firm white fish or even grilled Portobello mushrooms!

However if you happen to have some anchovies at hand – you have yourself a sensational pasta sauce!!  Keep Reading
