Updated: Roasted Salmon with Pesto & Parmesan Topping

This is an incredibly easy and tasty way of making salmon! I adapted and updated this recipe from my all time favourite British cook Delia Smith in order to make it completely LCHF friendly and I was very impressed with the outcome.

In Delia’s original recipe she uses individual salmon fillets, however I bought an entire side and decided to keep it whole. She also uses breadcrumbs (click here if you would like to see the original recipe), however I used finely chopped walnuts instead, and you know what? I think I prefer this version.  The nuts gave the dish a lovely nutty taste as well as a crunchy texture. Keep Reading

Pork Chops with Creamy Mustard Sauce

There hasn’t been a lot of food blogging going on here at The Travelling Chopsticks, and for this I apologise. However, now that we have settled into Brasilia and there are no massive travel plans until Christmas, be expecting a lot more goodies to come out of our kitchen :)

None of our kitchen stuff has arrived yet – they will most likely be arriving by November! Although with this bloody government shut down, God only knows when I will see my things again (Republicans…can you guys get your shit together and vote!?!) So it means for the time being I am cooking with rather crappy pots and pans, dull kitchen knives and no fancy, schmancy Kitchen Aid! However, I shouldn’t complain, at least I have the basics and with that you really can make anything!

Tonight we made pork chops in a dijon mustard sauce and they were good :)

Spiced Salmon Kebabs

I saw this recipe in June addition of Bon Appetit. It looked quick, simple and perfect for a mid week meal – I also liked the idea of making a kebab with salmon. C and I tend to buy a large bag of frozen salmon filets from Costco, and slowly work a way through them, but usually we have them as steaks, so I thought this would be fun to try.

Seed Crackers or Fröknäcke in Swedish

 I don’t know why – but to my ear everything sounds better in Swedish. Even though English is definitely my stronger language – the sound of spoken Swedish is one of the best things I know – especially if it is coming from a Skåning (someone from the south). I even prefer to read in Swedish as there is something so poetic in the way Swedish authors put their words to paper and the rhythm that they create that I don’t seem find in the English language. What I hate however is writing in Swedish…an absolute nightmare! Which is why you will never see a post in Swedish, or the fact that I only write emails and texts in English to my Swedish friends (something they find quite amusing)!

So getting back to my post – I originally made these bad boys to go with my new low carb high fat (LCHF) lifestyle that I have embarked on the last 3.5 weeks. I was going to post it in my other blog LCHF…What?! – but thought that these are soo good and so simple to make that everyone will enjoy them.

Swedish Christmas in Mexico City

I love Christmas! It really is one of my favourite celebration and my favourite time of year. I always felt very lucky growing up – as we would celebrate not one but TWO Christmases (is that even a word?).

We would celebrate the Swedish Christmas on the 24th with traditional Swedish Julbord (literally translated into Christmas table which is similar to smörgåsbord) and then the English Christmas on 25th with Turkey and stuffing! As I grew up in Singapore, which is naturally a hot tropical country, my mother would shut all the windows and blast the aircon on high – so it felt slightly cool, and reminiscent of her Christmas she would spend in Sweden!  Keep Reading
