A super quick post today, as I really want to go to bed!
I made this for dinner tonight as a side to some lovely roast chicken drumb sticks that C made. Sometimes we forget that the best meals are those that are the simplest to prepare, and these sautéed green beans are really very straight forward.
The next time you are wondering what to have as a side – give these guys a go. Now, I had some garlic butter in the freezer that I made a few weeks ago, but this will work just as well if you have them as separate ingredients.
Sautéed Greed Beans in Garlic Butter
- Green beans – tips cut off
- Bowl of ice water
- Garlic
- Butter
- Salt & Pepper
- Roasted Pine nuts (optional)
Bring salted water to a boil.
Place the green beans into the boiling water and boil for 5 minutes.
With a slotted spoon remove the green beans from the pot, and plunge them into a bowl of icy water (this stops them from continuing to cook)
Drain the beans. You can do this ahead of time and let the beans rest until you need them.
In a skillet heat up the garlic butter, once melted throw the beans into the pan and toss around so they get a nice glossy coat. Season with salt and pepper.
If you are using raw garlic, fry for a further 3-4 minutes until the garlic is fragrant.
Serve with a few roasted pine nuts
If you want to add your own twist to these recipe – go ahead! In retrospect this would have tasted fantastic with a squeeze of lemon and/or some shaven parmesan!
Why have I never thought of to keep the garlic butter in the freezer? I always have leftovers I try to make use of! Great idea. Thank you!
