Lettuce Wrap

You ever make something that is so simple yet so incredibly delicious that you wonder why you don’t prepare this every day of the week? Well I had that revelation yesterday when I made these Asian inspired chicken lettuce wraps! The combination of the soya marinated chicken with the fresh clean crunch of the iceberg lettuce – was fantastic! I really have no idea why I have not attempted to make this sooner. Best, of all, it is so easy to prepare and such a light yet filling meal.

I used this recipe from RasaMalaysia http://rasamalaysia.com/lettuce-wraps-recipe/2/ as an inspiration, however as I had no oyster sauce, kecap manis or hoisin sauce, I decided that I would just free style on my own marinade and use sweet chili sauce as the dip – and it turned out excellently.

We also had some Vietnamese rice paper at home, which we made some rolls out of, and although good it just could not beat the crisp fresh texture of using the iceberg lettuce…but it does work :) And just think about the possible variations: beef, shrimp, vegetarian…

I would however encourage you to try out the recipe from RasaMalaysia – but if you like me want to make up your own do so – it really can’t go wrong, below are the ingredients that I had at home and that I used, but I have no real quantities for you but you get the general idea.

Chicken Letuce Wraps

  • vegetable oil
  • sesame seed oil
  • 150g ground chicken
  • Soy Sauce
  • Fish Sauce
  • Honey
  • 1 red onion, finely chopped
  • 1 red peper finely chopped
  • 3 cloves of garlic minced
  • Iceberg lettuce
  • Carrots – thinly sliced
  • Corriander – chopped

Marinade the ground chicken with the soy, fish sauce, honey and garlic and let stand for 10 minutes.

Mean while cut all your vegetables. Heat a pan with a combination of vegetable and sesame seed oil, quickly fry the onions and red peper then add the chicken. Stir fry until cooked through.

Break some lettuce leafs off, and assemble your wrap – and voila your done! A delicious quick and healthy meal on the table in half an hour – what more could you want for a mid week meal?
