Coronation Chicken – bringing back a clasic!

I know, I know, I know…its been ages since I last posted, and I have to say I have no other excuse rather than not feeling overly inspired! Plus I have been trying to finish my post on Peru which I never seem to get ready with. I just have to stop being so picky and go ahead and publish it!

Pork and Udon Noodle Soup

It has been weeks since I hit the gym and I have absolutely no excuse other than I just have lost all motivation and umph.  It’s silly really – as I know how intrinsically my mood is dependent on my exercise levels, in fact my mood follows this very simple equation:

Alex + Food + Exercise = Happy and energetic

Alex + Food – Exercise = Moody, listless, feeling fat and horrible to be around (sorry ‘C’!)

It’s funny, when I was working full time in Singapore and had full busy days, I felt so motivated and organised and was always able to fit in a workout every evenings of the week. Now, when I am unemployed and have all the time in the world…I struggle to find time. Keep Reading

Broiled Scallops with Parmesan

Although, I tend to do most of the cooking at home, that is not to say that ‘C’ cannot cook. In fact he is an excellent cook, and enjoys it almost as much as I do. On a day to day basis, I tend to have more time on my hands than he does (being unemployed and all), so am able to potter around far more in the kitchen. However, when he does cook I know that I am in for a real treat.

Spicey Lentil Stew

After the Pavlova I made yesterday, and the rather glutinous lifestyle that ‘C’ and I have been leading the last month. We decided (or rather I decided, and am forcing ‘C’ along on the ride) that today we are going to get back on track of our health kick again. This includes daily trips to the gym and of course healthy meals.

The basic recipe for this lentil stew is one that I found on a blog a couple of months ago, I copied and pasted it into my word documents and filed it under ‘recipe’. The only problem is, I didn’t record who’s blog it belongs to. Pavlova with Summer Berries

When I was living in Europe – May was one of my favourite months of the year. Spring was here and it meant that summer was just around the corner, and there is nothing in the world more beautiful than a Swedish summer (as long as it’s not raining!)

So today, sitting in Mexico I decided to make this Pavlova with summer berries. This is honestly one of the easiest, yet most eye pleasing deserts that I know – especially if you are entertaining. It looks as though you have been slaving away in the kitchen all afternoon putting this master piece together – but in reality, it is quite the opposite. What is really good about this recipe is that you can use whatever fruit or berries that you have at hand or in season, but raspberries and blueberries are my favourite.

Spaghetti with Cherry Tomato, Spinach and Garlic Sauce

Happy Easter Monday!

Yesterday, ‘C’ and I came back from a lovely weekend at our friend’s country house about a 2 hours drive from Mexico City, situated in a little quaint Mexican village called Malinalco. Although it was meant to be a relaxed weekend by the pool – there was far more drinking and eating than I had anticipated! This combined with an incredibly hectic 2 weeks in Peru (which I promise to write about soon) has left me broken.

I woke up this morning flu ridden and absolutely drained – and in desperate need of both vegetables and some comfort food. So for lunch I rustled up this tomato and spinach spaghetti, and it was exactly what the Dr. ordered.  Keep Reading

Thai Green Chicken Curry- in a Claypot!

One thing that you HAVE to love about flying within Latin America and with Latin American Airlines is their baggage allowance. If you are flying economy you are allowed to check in TWO bags of up to 23kg – that is 46kg per person and not including your hand luggage!! Why can this not be a universal airline law? I can’t begin to explain how many times I have flirted, fought and cried with the check-in clerks in Europe because I was 2kg overweight. Keep Reading

From Exploding Ovens to our Trip to Peru

Well this weeks cooking efforts was abruptly halted on Sunday when our temperamental old oven decided she had had enough and blew-up. Yes, you read it right – our gas oven had a small explosion!!
