Although, I tend to do most of the cooking at home, that is not to say that ‘C’ cannot cook. In fact he is an excellent cook, and enjoys it almost as much as I do. On a day to day basis, I tend to have more time on my hands than he does (being unemployed and all), so am able to potter around far more in the kitchen. However, when he does cook I know that I am in for a real treat.
Today was no exception….Broiled scallops with butter and melted parmesan cheese!
I had never made scallops before, and had the impression that they were quite tricky little buggers to prepare, but I found out that my impressions couldn’t be further from the truth.
‘C’ had bought a frozen packet of ready prepared scallops on the half shell, from Superama (our local supermarket here in Mexico). It was only a question of de-frosting them, grating a generous portion of parmesan cheese over each scallop, add a small dollop of butter – and then bang them under the broiler until the butter has melted and the cheese turns this lovely golden colour – and that was it!
Seriously, how can it be so simple?! And, how have I not made this sooner? This recipe goes to show that cooking fantastic food does not need to be a laborious love affair, with hours spent sweating over pots and pans in your kitchen…I think that these bad boys will be served as starters at our next dinner party, it’s just so simple!
So here is a re-cap of the instructions:
- Defrost ready prepared scallops on the half shell.
- Place a generous portion of parmesan cheese over each one.
- A little dollop of butter over each one
- Broil until the cheese is golden (4 to 5 mins)
- Serve with a wedge of lime
- EAT and ENJOY!
