Jamie Oliver has been my go to guy for many a recipe, but none more so than for his basic risotto recipe. It has become a staple. It is fail-proof and will always result in that perfect creamy yet somehow ‘light’ risotto. Have you ever made something that was so incredibly good that you even surprised yourself? You think- how on earth could I have made that?
That was exactly my reaction on Saturday when I made this Shrimp Bisque for ‘C’ who was returning home after a week-long business trip. Although rather time consuming, and I had a few kitchen cock-ups, the end result was worth it. The flavours were so deep and rich that I could not stop myself from dipping my spoon into the pot every few minutes while I was making it, just to re-confirm that it really was that good.
This is a very quick and very easy dish to make – especially if you are on your own, as I am at the moment! In fact, for the majority of June ‘C’ will be out of town and it is never that much fun cooking for one – so I am sure you will see a lot of these ‘quick & easy’ recipes in the next few weeks.
The flavours in this stew is distinctly Indian, with generous amounts of cumin, garam masala and turmeric, which I think have to be my all time favourite spices. There is no meat in this stew but you really do not miss it as the flavours are so bold. I find this stew actually incredibly comforting. Keep Reading
This summer ‘C’ and I are going to the UK to attend my cousins wedding in York, and as we will be in the North of England I just could not pass on the opportunity to show ‘C’ Durham, the city I went to university. I did both my bachelors and my masters degree in Durham, and I loved it. I made some exceptionally good friends there, all of whom I still consider to be some of my closest today (despite not living in the same country as them for over 5 years) and I truly felt this is where I grew-up a lot and learnt a lot about myself. I know, I know, I know…its been ages since I last posted, and I have to say I have no other excuse rather than not feeling overly inspired! Plus I have been trying to finish my post on Peru which I never seem to get ready with. I just have to stop being so picky and go ahead and publish it!

It has been weeks since I hit the gym and I have absolutely no excuse other than I just have lost all motivation and umph. It’s silly really – as I know how intrinsically my mood is dependent on my exercise levels, in fact my mood follows this very simple equation:
Alex + Food + Exercise = Happy and energetic
Alex + Food – Exercise = Moody, listless, feeling fat and horrible to be around (sorry ‘C’!)
It’s funny, when I was working full time in Singapore and had full busy days, I felt so motivated and organised and was always able to fit in a workout every evenings of the week. Now, when I am unemployed and have all the time in the world…I struggle to find time. Keep Reading
Although, I tend to do most of the cooking at home, that is not to say that ‘C’ cannot cook. In fact he is an excellent cook, and enjoys it almost as much as I do. On a day to day basis, I tend to have more time on my hands than he does (being unemployed and all), so am able to potter around far more in the kitchen. However, when he does cook I know that I am in for a real treat.

After the Pavlova I made yesterday, and the rather glutinous lifestyle that ‘C’ and I have been leading the last month. We decided (or rather I decided, and am forcing ‘C’ along on the ride) that today we are going to get back on track of our health kick again. This includes daily trips to the gym and of course healthy meals.
The basic recipe for this lentil stew is one that I found on a blog a couple of months ago, I copied and pasted it into my word documents and filed it under ‘recipe’. The only problem is, I didn’t record who’s blog it belongs to.
